Pineapple Mille Feuille

Enjoy this delectable pastry with a cup of tea.

 

Pineapples are cooked slowly with cinnamon and cloves to absorb the warm spice flavor before they are carefully placed on a layer of almond cream. The cream and pineapple slices are sandwiched by two layers of hand-cut mille-feuille dough before being baked and showing a delightful golden brown.

 

Each log is about 20cm long and can be cut into 4-6 slices.
