"Black Peony" Ganache Entremet

This is a dark-chocolate ganache entremet with a twist of mango. It consists of a piece of chocolate Joconde at the bottom and a layer of mango compote with dried mango. Both are wrapped by the smooth dark chocolate whip ganache. The whole cake sits on a piece of crunchy chocolate pate sucree. The decoration on top, which is also made of chocolate ganache with dried mango bits, is meticulously hand made by our chef that vividly depicts the splendid flower.
